Popular ShrimpBeing a favorite food among many, shrimp is probably one of the mot-widely consumed foods all over with a lot of recipes that have it as themain ingredient. The sweet taste and tender meat as well as thenutritional value make it very famous, even taking a bit of center stage ina movie, with a restaurant franchise inspired by the same restaurant in themovie.With the wide array of choices, choosing these tasty crustaceans forcooking may be a challenge. There are however, popular varieties thatare available and are quite common for cooking. Depending on wherethey live and what their diet is, the taste differs. The wild varieties, forexample, are caught in their natural habitat and feed on seaweed andsmaller crustaceans. As a result, they have thicker shells and moreenriched flavor than those in culture ponds. Shrimp is classified when soldin the market according to size. Extra small shrimp has around 65 piecesper pound while the big ones like extra colossal shrimp go to only aboutpound per pound and may be served as grilled or a highlight of dishes likepaella supreme.Bay shrimp is the top choice for sushi as the kuruma or wheel variety,which is the original ingredient used, is quite pricey. Although using bayshrimp makes the taste quite ordinary, black tiger prawns can be the bestalternative to kuruma, although smaller. Shrimp here is preparedpoached or steamed, although steaming is preferred since it locks theflavor inside.Shrimp may be purchased fresh, and sometimes live and jumping. Theseare highly perishable and should ideally be eaten within 24 hours ofpurchase. When cooked properly, they have the best quality meattexture and flavor. Imagine eating classic bouillabaisse with bread after aday’s catch or Newfoundland seafood chowder. In choosing freshshrimp, make sure the shrimp smells like saltwater and has almosttranslucent flesh. Avoid pink meat, strong ammonia scent, black rings, orblack spots. Frozen is best if you don’t have ready access to fresh. Frozenshrimp, or those bought in groceries are best and more flavorful if they stillhave the shell on, as the shells protect both the meat and the flavor soyour spicy shrimp pasta still has the goodness and tenderness of the meatwhen served.Shrimp may be used in salads as an added protein source or tossed inpasta either in olive oil base, tomato, or white sauce base. They may beused as main dishes and even simple ways of cooking it like sautéing,
boiling, or steaming produce delectable appetizers or meals for the wholefamily to enjoy.
